- Spread the oatmeal mixed with butter in the bottom of the bowl and spread it evenly, using light pressure with your hand, being careful not to break the bottom.
- In a bowl, mix well the yogurt, labneh, honey, vanilla, lemon juice, and coconut flour and pour over the oatmeal base.
- Sprinkle with fresh cherries.
- If you want a more sugary taste, you can boil the cherries with 2 tablespoons of granulated sugar in a saucepan and pour over them after they have a jam-like consistency.
- After baking for about 30 minutes in the oven, remove and leave at room temperature.
- For a richer flavor, chill in the refrigerator for 2 hours.
raspberry pie

- 2 cups raspberries
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- juice of ½ lemon
- 1 cup oatmeal
- ½ cup coconut flour
- ¼ cup melted butter
- 2 tablespoons honey
- 2-3 tablespoons of water (as needed)
Preparation:
- Grease a tart dish with butter and preheat the oven to 180°C.
- For the sourdough, combine oatmeal, coconut flour, melted butter and honey.
- Knead well until you get a dough consistency, at this point you can add some water, you can add water little by little depending on the consistency of your dough. Remember that tartlet dough should be slightly firmer than other types of dough.

- In the meantime, start stirring the raspberries in a saucepan over low heat so that they release the juice.
- Add chia seeds and 1-2 tablespoons of water and continue stirring until the mixture comes to a boil.
- Add vanilla and lemon juice and remove from heat.
- Pour over the tart base and spread well.

Materials:
- 1 cup chopped pitted apricots
- 2 cups milk (you can use any milk of your choice)
- 2 tablespoons starch
- 2 tablespoons honey or agave syrup
- 1 tablespoon vanilla extract
- a pinch of cinnamon
Preparation:
- Prepare the apricots by tossing them over low heat, adding a pinch of sugar if desired.
- Process it in a food processor and purée.
- Heat the milk in another saucepan until it boils.
- In a separate bowl, mix cornstarch, honey and vanilla. If you can’t get a smooth enough consistency, you can mix it with a little milk or water.
- Add the mixture to the saucepan and continue to simmer over low heat.
- Cook until pudding-like and divide into bowls to cool.
- Add apricot puree to bowls and serve.
- You can sprinkle cinnamon on top if you like.
