Training:

  • Preheat oven to 180 degrees.
  • Grease two round springform pans with a diameter of 20 cm with oil and cover with baking paper.
  • Mix butter, chocolate and sugar in a saucepan over low heat until they are completely dissolved, remove from heat and let cool slightly.
  • Then add the eggs one at a time and beat well between each addition.
  • Add flour, cocoa, baking powder, soda, salt and spices and continue beating the dough.
  • If the dough is too thick, you can soften it with 3 tablespoons of milk, adding little by little until the dough falls off the spoon easily so that it is not too runny.
  • Divide the batter evenly among the prepared pans and bake for 25-30 minutes until puffed up (until a toothpick inserted in the middle comes out clean).
  • Let cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
  • For the cream, beat the butter until very soft.
  • Add powdered sugar one tablespoon at a time, beat and add vanilla.
  • Spread the cream evenly between two biscuits, covering the top and sides.
  • Mix together the ginger, cinnamon and nutmeg for decoration, then strain through a small sieve and pour over the cake.
  • If you like, you can also use the molds you have to create special patterns when decorating.

panettone

Here’s what you’ll need for a homemade version of panettone, a delicious Christmas treat to grace your tables:

Materials:

  • 5 cups flour
  • 1 tablespoon instant yeast
  • 2/3 cup water
  • 5 large eggs
  • Finely grated zest of 1 orange
  • 1/3 cup granulated sugar
  • 2 teaspoons liquid vanilla
  • ½ teaspoon salt
  • Approximately 170 g unsalted butter at room temperature + 1 tablespoon cold butter

For fruits and nuts:

  • ½ cup black raisins
  • ½ cup yellow raisins
  • ½ cup dried apricots, oranges, apricots, plums and similar dried fruits, cut into small pieces
  • ½ cup unpeeled raw almond slices

Training:

  • Preheat oven to 180 degrees.

  • Then add orange zest, sugar and vanilla.
  • Beat well, slowly adding the remaining flour to the dough, the dough should be soft and flexible, stop adding flour when you reach this consistency.
  • Then start rolling out the dough and shape it into a rectangle, neither too thin nor too thick.
  • Mix well the mixed dried fruits and almonds and sprinkle them over the dough.
  • Then press firmly with a roller so that the fruit and almonds are completely incorporated into the dough.
  • It’s time to give the test shape.
  • Here you can act in an original way or try to get the original Panettone.
  • Fold the dough inward on the long sides three times to make another rectangle.
  • Then connect the rectangle to fold one of its two short sides, this time you will have a square shape.
  • Holding on to the ends of the square, as if gathering a ball, bring the corners to the center and connect the ends together.
  • Gently wrap the dough around the dough with your hands like a ball and place it in the cake pan with the part you have joined at the bottom.
  • Cover it and leave it in a warm place for 1-2 hours if you have time.
  • Then put in the middle of the dough a tablespoon of the oil that you divided into the upper part, and put it in the oven, drawing four lines with a knife from the middle to the edges.
  • Bake for about 30 minutes, then remove, cover with aluminum foil and return to the oven.
  • Bake for another 40 minutes, then remove from oven and let cool.
